I’m just back from a weekend in Seville and am feeling refreshed if not knackered and have a little spark lit inside of me for all the things I want to do and write about. One being Sevilla, which I absolutely loved so will come soon, I promise. One task being to learn Spanish, but actually this time (I’ve been saying that for years!). Another on the to-do list is get my recipes together.
Tonight’s request from the man was tuna pasta. He made me a version of this a couple of weeks back which frankly was a treat, but me being me had a few ideas on ingredients to change it slightly. Tonight’s version got dubbed as “the best pasta dish you’ve made for me” so what better place to start.
What you’ll need:
- 1 Onion, finely sliced
- 2 Cloves Garlic, minced
- 250ml tomato purée
- 1tsp Dried Parsley
- 1tsp Dried Basil
- 1tbsp Smoked Sea Salt
- 4 large Fresh Tomatoes or 1 punnet cherry / grape tomatoes, skin on and diced
- 200g Mixed Olives, sliced
- 2 tins Tuna
- Zest of 1 Lemon
- 1 large handful Kale
- Pasta of your choice
What you’ll need to do:
Start by heating a good glug of olive oil in a pan and then add your onions. Stir until they begin to cook, then add in the garlic and stir frequently for about 1 minute.
Add the tomato purée, stirring for a couple of minutes, then add the diced tomatoes. Put it the dried herbs, smoked salt, a good pinch of black pepper and stir again.
Add the olives, lemon zest and tuna and turn the heat down to low, stirring every few minutes. Allow to simmer for about 5 minutes before adding the kale.
Pour your cooked pasta into the sauce and toss. Finish with a grind of black pepper and enjoy!
